In July we launched "Bloom on Zoom," our free, monthly webinar series featuring timely topics in naturopathic medicine. Welcome Dr. Neffinger!

This year we were thrilled to welcome Dr. Elisheva Neffinger to the practice. Dr. Neffinger specializes in women's health, nutrition, weight management, acne, dermatology and tick-borne illnesses. She graduated with honors from the University of Bridgeport, where she earned her doctorate in naturopathic medicine. Learn more about Dr. Neffinger here on our blog.

Naturally Healthy

Wholesome Recipes from Bloom Natural Health


This hearty and comforting wintry soup contains fortifying and beneficial ingredients, including butternut squash (Vitamins A & C), garlic (immune-boosting), ginger (good for digestion), and rosemary (anti-inflammatory). Serve with whole grain bread or a salad of leafy greens.



Ingredients 2 Tbsp. Extra Virgin Olive OIl 1 Large Yellow Onion, Chopped 1/2 tsp Sea Salt, Plus More to Taste Freshly Ground Black Pepper, to Taste Cayenne Pepper, to Taste (Optional) 1 (3 Pound) Butternut Squash, Peeled and Cubed 3 Cloves Garlic, Chopped 1 Tbsp Fresh Sage, Chopped 1/2 Tbsp Fresh Rosemary, Minced 1 tsp Fresh Ginger, Grated 3-4 Cups Vegetable or Chicken Stock Chopped Parsley, to Garnish Toasted Pepitas, to Garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add onion and sauté until translucent (5-8 mins). Season with salt and pepper. Add squash and cook until it begins to soften (8-10 mins).

  • Add garlic, sage, rosemary, ginger, and cayenne. Cook until fragrant (1 min), then add 3 cups of stock. Bring to a boil, then simmer until squash is tender (20-30 mins).

  • Cool slightly, and blend in batches (or use immersion blender), until smooth. If soup is too thick, add a splash of stock. Season to taste with more salt and pepper. Garnish with parsley and pepitas, and serve with crusty bread and salad.
